Menu Choices

Okay, we're falling down on the job of negotiating the menu for Men's Retreat XVIII.

The world revolves around Beef. Beef should be the meal of the first evening, not fish. Either rib eyes or New Yorks. Or maybe a big standing rib roast. Salmon should be the second night, when our digestive systems can use a break from the beef of Night 1. Then, see, on Night 3 we have the option of returning to more Beef, or going to a different red meat (rack of lamb) or chicken. Or a mixed grill, in which Beef can be combined with other meats. (It also gives us an excuse to open more bottles of wine to match up with the mixed grill.) As I am likely to have to miss Night 4 (Sunday), you can have more fish then if you want.

The (kitchen) floor is open.
Comments:
The standing rib roast would offer enough meat for some roast beef hash the next morning. (Something at which I am becoming adept.)
 
If we are going for more beef, I can handle tri-tip. A little plebian, but very Central Coast.
 
Nah. Tri-tip is suitable for a mixed grill, but barely makes it as a Main Dish, unless it has a killer maranade.
 
Authentic tri-tip is rubbed with salt (kosher, of course), pepper (freshly cracked), and garlic powder. You can add oregano and a little rosemary for good measure.

You can keep your marinade.
 
I must say I have heard much about Steve's standing rib roast, but have never been present when it has been prepared. I would like to sample that.

Will the salmon last to night #2?

(Another fish possibility thll earn me no small amount of grief is seared ahi with garlic wasabi butter.)
